Opening a restaurant in Dubai, Abu Dhabi, Sharjah or Ajman means hundreds of decisions, and refrigeration is one that is expensive to get wrong. Too little cold storage and your chefs fight for space every service; badly placed equipment and your kitchen runs hot, wastes energy and breaks down in summer.
Use this checklist during design and fit-out.
1. Plan your cold storage around the menu
Your menu decides your refrigeration. A seafood restaurant, a bakery, a burger concept and a fine-dining kitchen have very different needs. List what you store chilled and frozen, how much, and how often deliveries arrive. From that you can decide whether reach-in units are enough or whether you need a walk-in chiller or freezer.
2. The equipment most restaurants need
- Walk-in chiller for bulk produce, dairy and prepared items (larger kitchens)
- Walk-in or reach-in freezer for frozen stock
- Under-counter chillers and freezers on the line, so chefs don’t walk away from their station
- Refrigerated prep counters (salad, pizza and sandwich stations)
- Blast chiller if you cook in batches and cool food for later service
- Ice machine and bar or beverage cooling front of house
- Display chillers for desserts, drinks or grab-and-go
3. Think about heat before you place equipment
Every refrigerator pushes heat out somewhere. Line equipment packed beside fryers and ovens, with no space to breathe, works far harder and fails sooner. Leave clearance for airflow, keep condensers away from cooking heat, and coordinate with your kitchen air conditioning so the room itself stays at a workable temperature.

For walk-ins and larger systems, the condensing unit usually goes outside or on the roof. In malls and towers, the location, pipe route and drainage need approval from the landlord or building management, so plan them early in the fit-out, not after the ceiling is closed.
5. Power, drainage and access
Refrigeration needs dedicated electrical supply, condensate drainage and service access. Missing any of these causes delays at handover. Your refrigeration contractor should give your fit-out team a clear list of requirements.
6. Food safety and temperature monitoring
UAE food safety authorities expect you to store food at safe temperatures and keep records. Build in thermometers or digital monitoring and alarms from day one, and follow the requirements of your local municipality.
7. Maintenance from the first day
New equipment still needs care. Start a maintenance plan when you open, so coils are cleaned and problems are caught before your first summer rush.
Get it right before opening day
Refrigeration is easiest to get right on paper. Our commercial kitchen refrigeration team works with restaurant owners and fit-out contractors across Dubai and the UAE to size, supply, install and look after it.
